HOMEMADE CREPES ๐Ÿ˜‹

Ingredients:

3 eggs
ยฝ liter of milk
ยฝ teaspoon of salt
250 grams of flour
50 – 55 grams of butter

Preparation:

  1. In a large bowl, add the flour and salt. We stir with a hand whisk and make a small well in the center of the flour, as if we were making homemade pasta.
  2. Then we melt the butter for a few seconds in the microwave and set it aside.
  3. Pour the eggs and melted butter into the hole previously made in the flour. We mix with the same hand whisks until we see that we have correctly integrated the ingredients. We can previously break the eggs into another container to prevent pieces of shell from escaping.
  4. Now we pour the milk little by little without stopping stirring. We must obtain a homogeneous mixture and practically without lumps.
  5. Then, we pass the mixture obtained through a fine strainer with the help of a spatula. In this way, we will not let the lumps that have not yet dissolved pass. Cover the dough and let it rest for at least an hour.
  6. Once the time has elapsed, we equip ourselves with a medium or large pan, depending on the size of the homemade pancakes we want to obtain. It is recommended to use a non-stick pan. We place the pan over low heat and grease it with a little butter. In this case, we can help ourselves with absorbent paper to remove the excess.
  7. We take a serving ladle and use it to pour the dough into the pan. In this way, we will not be guilty of adding too much.
  8. We spread the mixture by rotating and gently lifting the mold.
  9. When bubbles start to form, lift one edge of the crepe with a spatula. If it is golden brown, turn it over and cook on the other side. This process can take about 1 minute from the moment you spread the batter on one side, and 45 seconds on the other.
  10. Continue the same process until you have finished all the batter.
