Soft nut cake

Ingredients

  • 200 g of shelled walnuts 
  • 150 g of sugar 
  • 150 g of melted butter 
  • eggs 
  • 200 g of 00 flour 
  • 1 sachet of baking powder ( 16 g )
  • 100 ml of milk 
  • A pinch of salt 

Instructions

  • Preparing the walnuts: Finely chop the shelled walnuts, leaving a few larger pieces to add a nice crunch to the cake.
  • Beat the eggs and sugar: In a large bowl, beat the eggs with the sugar until the mixture is light and fluffy. This step is essential to give lightness to the soft walnut cake .
  • Add the melted butter: Slowly incorporate the melted butter into the mixture, stirring gently to keep air incorporated.
  • Combine the dry ingredients: Sift together the flour, baking powder, and pinch of salt. Gradually add this mixture to the egg mixture, stirring from the bottom up to avoid deflating the dough.
  • Incorporate the walnuts and milk: Add the chopped walnuts and milk, continuing to mix gently until the mixture is smooth.
  • Preparing the mold: Butter and flour a cake mold of about 22-24 cm in diameter. Pour the mixture into the mold, leveling the surface with a spatula.
  • Baking: Preheat the oven to 180°C. Bake the cake for about 40-45 minutes. To check if it is cooked, insert a toothpick into the center of the cake: if it comes out clean, the cake is ready.
  • Cooling and Serving: Once baked, remove the cake from the oven and let it cool in the pan for 10 minutes. Then, transfer it to a wire rack to cool completely. Before serving, dust with powdered sugar for a finishing touch.
