Potato Zeppole

he preparation of potato zeppole requires simple and easily available ingredients. By following this basic recipe, you will obtain soft and perfect zeppole for any occasion.


Ingredients

  • 500 g of yellow-fleshed potatoes
  • 200 g of 00 flour
  • 2 eggs
  • 30 g of butter
  • 50 g of sugar
  • Grated peel of a lemon
  • A pinch of salt
  • Seed oil for frying
  • Powdered sugar for garnish

Instructions

  1. Boil the potatoes in plenty of salted water until soft. Once cooked, mash them with a potato masher and let them cool slightly.
  2. In a large bowl, combine the mashed potatoes with the flour, eggs, soft butter, sugar, lemon zest and pinch of salt. Mix until the mixture is smooth and homogeneous.
  3. Heat the oil in a deep frying pan. Form the zeppole into donuts or balls with the dough and fry until golden brown.

Garnish: Once golden, drain on absorbent paper to remove excess oil and sprinkle generously with powdered sugar. The contrast between the crispy outside and the soft inside makes the potato zeppole irresistible.
