Prepare the ingredients : Start by preheating the oven to 180°C. Grease a cake tin with vegetable oil to prevent the dough from sticking. Chop the almonds coarsely and set aside.
Mix the dry ingredients : In a large bowl, combine the rolled oats , baking powder, and erythritol. This mix will be the base of the Apple Cranberry Oatmeal Cake .
Add wet ingredients : In another bowl, whisk together the eggs and yogurt until smooth. Add the grated apple and cranberries.
Bring it all together : Pour the wet mixture into the bowl with the dry ingredients and mix well. Add the chopped almonds, mixing gently.
Pour into the mold : Transfer the mixture into the previously greased mold and level the surface.
Bake : Bake the cake for approximately 35-40 minutes or until the top is golden and a toothpick inserted into the center comes out clean.
