Apple and Cranberry Oatmeal Cake

Ingredients

  • 220 g of oat flakes 
  • 1 large apple 
  • 160 g of yogurt 
  • 1/2 teaspoon baking powder 
  • 2 eggs 
  • 2 tablespoons erythritol (or other sweetener) 
  • 80 g of cranberries 
  • 80 g of almonds 
  • Vegetable oil for greasing the mold

Instructions

  • Prepare the ingredients : Start by preheating the oven to 180°C. Grease a cake tin with vegetable oil to prevent the dough from sticking. Chop the almonds coarsely and set aside.
  • Mix the dry ingredients : In a large bowl, combine the rolled oats , baking powder, and erythritol. This mix will be the base of the Apple Cranberry Oatmeal Cake .
  • Add wet ingredients : In another bowl, whisk together the eggs and yogurt until smooth. Add the grated apple and cranberries.
  • Bring it all together : Pour the wet mixture into the bowl with the dry ingredients and mix well. Add the chopped almonds, mixing gently.
  • Pour into the mold : Transfer the mixture into the previously greased mold and level the surface.
  • Bake : Bake the cake for approximately 35-40 minutes or until the top is golden and a toothpick inserted into the center comes out clean.
