Ingredients
- 2 cups flour
- 1/3 cup brown sugar
- 1/3 cup granulated sugar
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 egg
- 3/4 cup milk
- 1/2 cup melted butter
- 1 teaspoon vanilla
- 1/3 cup raspberry jam
Instructions
- Preheat the oven to 180°C and prepare a muffin pan with paper liners.
- In a large bowl, mix the flour, sugars, baking powder and salt.
- In another bowl, beat the egg and add the milk, melted butter, and vanilla. Combine the wet ingredients with the dry ingredients, mixing gently until combined.
- Pour the batter into the muffin cups until half full. Add a teaspoon of jam on each muffin and cover with more batter.
- Bake for 20-25 minutes or until a toothpick inserted into the center comes out clean.
Notes
For a healthier version, you can replace the flour with whole wheat flour and use natural sweeteners.
