Chicken Cacciatore

Ingredients

  • To prepare the chicken cacciatore , start by heating a drizzle of extra virgin olive oil in a large pan. Add the chicken pieces and sauté until golden brown. This will seal in the juices and keep the meat tender during cooking.
  • Add finely chopped onion and garlic and let them wilt together with the chicken. Then, blend with red wine and let it evaporate to obtain a stronger flavor. At this point, add the peeled tomatoes or tomato puree, along with the bay leaves and rosemary sprigs. Season with salt and pepper.

Instructions

  • Cover and simmer for about 45 minutes, stirring occasionally. This slow cooking method ensures a succulent dish full of flavor.
