Ingredients
- 200 g of 00 flour
- 2 eggs
- 250 ml of milk
- 50 g of sugar
- 1 teaspoon baking powder
- A pinch of salt
- Oil for frying
- Powdered sugar for garnish
Instructions
- Beat the eggs with the sugar and a pinch of salt until frothy.
- Gradually add the sifted flour and yeast, alternating them with the milk to avoid lumps.
- Mix until you get a smooth, fluid batter.
- Heat the oil in a deep frying pan to medium (170-180°C). Make sure the temperature is constant for even frying.
- Using a spoon, drop small portions of the batter directly into the hot oil. Fry a few at a time to avoid temperature drops.
Service Tips:
- Once golden, drain the fritters on absorbent paper and sprinkle them with icing sugar.
- They are ideal to be enjoyed hot, accompanied by jam or spreadable creams.

This recipe does not require long preparation times and is perfect for improvising a tasty snack. Make sure that the oil is always at the right temperature to obtain crispy pancakes on the outside and soft on the inside.
