Pancakes with a Spoon

Ingredients

  • 200 g of 00 flour
  • 2 eggs
  • 250 ml of milk
  • 50 g of sugar
  • 1 teaspoon baking powder
  • A pinch of salt
  • Oil for frying
  • Powdered sugar for garnish

Instructions

  1. Beat the eggs with the sugar and a pinch of salt until frothy.
  2. Gradually add the sifted flour and yeast, alternating them with the milk to avoid lumps.
  3. Mix until you get a smooth, fluid batter.
  4. Heat the oil in a deep frying pan to medium (170-180°C). Make sure the temperature is constant for even frying.
  5. Using a spoon, drop small portions of the batter directly into the hot oil. Fry a few at a time to avoid temperature drops.

Service Tips:

  • Once golden, drain the fritters on absorbent paper and sprinkle them with icing sugar.
  • They are ideal to be enjoyed hot, accompanied by jam or spreadable creams.

Notes

This recipe does not require long preparation times and is perfect for improvising a tasty snack. Make sure that the oil is always at the right temperature to obtain crispy pancakes on the outside and soft on the inside.
