Ricotta and Raisin Cake

Ingredients

  • 2 eggs
  • 100 g sugar (about 4 tablespoons)
  • 1 teaspoon vanilla sugar
  • A pinch of salt
  • 80 g of butter
  • 130 g of ricotta
  • 150 g flour (about 5 heaped tablespoons)
  • 1 teaspoon baking powder
  • 80 g of raisins

Instructions

  • In a bowl, beat the eggs , sugar and vanilla sugar until light and fluffy.
  • Add a pinch of salt and the melted butter, continuing to mix.
  • Add the ricotta , working the mixture to combine the ingredients well.
  • Sift the flour with the yeast and gradually add them to the dough. Mix until you get a homogeneous consistency.
  • Finally, add the raisins and pour everything into a buttered and floured pan.

Notes

Make sure to preheat your oven to 180°C for even baking of the ricotta and raisin cake . If you want an even softer texture, you can use almond flour instead of traditional flour.
