Ingredients
- 2 eggs
- 100 g sugar (about 4 tablespoons)
- 1 teaspoon vanilla sugar
- A pinch of salt
- 80 g of butter
- 130 g of ricotta
- 150 g flour (about 5 heaped tablespoons)
- 1 teaspoon baking powder
- 80 g of raisins
Instructions
- In a bowl, beat the eggs , sugar and vanilla sugar until light and fluffy.
- Add a pinch of salt and the melted butter, continuing to mix.
- Add the ricotta , working the mixture to combine the ingredients well.
- Sift the flour with the yeast and gradually add them to the dough. Mix until you get a homogeneous consistency.
- Finally, add the raisins and pour everything into a buttered and floured pan.
Notes
Make sure to preheat your oven to 180°C for even baking of the ricotta and raisin cake . If you want an even softer texture, you can use almond flour instead of traditional flour.
