Ingredients
- 250 g of stale bread in cubes
- 100 g of diced speck
- 2 eggs
- 100 ml of milk
- Finely chopped parsley
- Butter for browning
- Salt and pepper to taste
Instructions
- In a large bowl, mix the stale bread with the milk. Let it sit for at least 10 minutes, so that the bread absorbs the liquid.
- Add the eggs, speck and parsley. Mix well until the mixture is smooth. Season with salt and pepper.
- Form the dough into balls, the size of a walnut. If necessary, add a little flour to make the mixture more compact.
- Cook the Tyrolean dumplings in boiling broth for about 15-20 minutes, until they rise to the surface.
