Tyrolean dumplings (Knödel)

Ingredients

  • 250 g of stale bread in cubes
  • 100 g of diced speck
  • 2 eggs
  • 100 ml of milk
  • Finely chopped parsley
  • Butter for browning
  • Salt and pepper to taste

Instructions

  • In a large bowl, mix the stale bread with the milk. Let it sit for at least 10 minutes, so that the bread absorbs the liquid.
  • Add the eggs, speck and parsley. Mix well until the mixture is smooth. Season with salt and pepper.
  • Form the dough into balls, the size of a walnut. If necessary, add a little flour to make the mixture more compact.
  • Cook the Tyrolean dumplings in boiling broth for about 15-20 minutes, until they rise to the surface.
