Ricotta and Orange Muffins

A fragrant and soft dessert, perfect for a high-energy breakfast or a delicious snack. Ricotta makes these muffins soft, while orange adds freshness and an irresistible aroma!

Ingredients:

🌾 200g of 00 flour
🍠 50g of potato starch
🥚 2 medium eggs
🍬 100g of granulated sugar
🧀 200g of ricotta
🛢️ 80ml of seed oil (sunflower or corn)
🍊 80ml of fresh orange juice
🍊 Zest of 1 orange
🧁 1 sachet of baking powder
🧂 A pinch of salt

Preparation:

Prepare the ingredients: Wash the orange well, dry it and grate the zest. Squeeze the juice and set both aside for later.
Dry ingredients: In a large bowl, sift together the 00 flour, potato starch, yeast and add the granulated sugar, orange zest and a pinch of salt. Mix well.
Liquid ingredients: In another bowl, combine the ricotta, seed oil, eggs and orange juice. Mix with a whisk until you obtain a creamy and smooth mixture.
Combine the compounds: Pour the liquid mixture into the dry ingredients and mix quickly with a spatula or wooden spoon, until you obtain a mixture without lumps.
Prepare the muffins: Take the paper cups and fill them about 3/4 with the mixture. You can also use single-serving aluminum cups if you prefer.
Cooking: Bake in a preheated static oven at 180°C (350°F) for 25-30 minutes. Always do the toothpick test: if it comes out dry, they are ready!
Cooling and decoration: Let the muffins cool at room temperature, then sprinkle with icing sugar for a super delicious finishing touch!
