Gluten Free Soft Chocolate Muffins

Ingredients:

🥚 1 egg
🍬 70 g sugar
🧈 30 g melted butter
🥛 100 ml milk
🌾 100 g gluten-free flour for cakes
🍫 30 g bitter cocoa powder
🥄 1 tablespoon baking powder
🍫 50 g chocolate chips

Preparation:

Melt the Butter:
Melt the butter in a bain-marie and let it cool. This step is essential to keep the dough soft!
Mix the Ingredients:
In a bowl, beat the egg with the sugar using a whisk until you get a smooth and creamy mixture.
Add the Other Ingredients:
Continuing to mix, add the milk, gluten-free flour, melted butter, cocoa and baking powder. Mix well until the mixture is smooth and lump-free.
Incorporate the Chocolate Chips:
Add half of the chocolate chips to the mixture and mix gently to distribute them evenly. This will ensure chocolate in every bite!
Prepare the Pan:
Line a 6-cup muffin pan with paper liners. Fill them about 3/4 full with the mixture, leaving room for the mixture to rise.
Decorate and Bake:
Sprinkle the remaining chocolate chips over the mixture. Bake in a preheated fan oven at 180°C and cook for 20-25 minutes.
Cool:
Remove the muffins from the oven and let them cool on a rack for a few minutes. Enjoy the irresistible aroma that spreads!
