Bakewell Cake with Ricotta, Almonds and Jam

Discover the pleasure of a soft and light cake with a delicious mix of almonds, ricotta and jam. Perfect for a dessert that conquers!

Ingredients (for 8 people):

200g of 00 flour
150g of sugar
100g of butter
100g of chopped almonds
250g of fresh ricotta
3 eggs
1 sachet of baking powder
200g of apricot jam
Grated zest of a lemon
Icing sugar to decorate

Instructions:

Prepare the base: In a bowl, mix the flour, sugar, softened butter and chopped almonds. Add an egg and knead until the mixture is smooth.
Roll out the dough: Spread the dough in a buttered and floured pan, creating an even layer.
Add the jam: Spread the apricot jam evenly over the base of the dough.
Prepare the filling: In a separate bowl, mix the ricotta with the sugar and lemon zest. Add the other two eggs and mix well.
Pour the filling: Spread the ricotta mixture over the jam.
Bake: Bake in a preheated oven at 180°C for 40-45 minutes, until the surface is golden.
Decorate and serve: Let the cake cool, sprinkle with icing sugar and serve!
