Soft and Light Apple Pie

The most loved apple pie in Italy, perfect for any time of day! Light, soft and irresistible, it melts in your mouth!

Ingredients (for 8 people):

3 apples 🍏 (better if golden or renette)
120 g of sugar 🍬
100 g of 00 flour 🌾
1 sachet of baking powder 🍰
2 eggs 🥚
60 ml of seed oil
60 ml of milk 🥛
Icing sugar (to taste for decoration)

Preparation:

  1. Preparation of the apples:
    Peel the apples and cut them into thin slices.
    Place them in a bowl and sprinkle them with a little lemon juice to prevent them from blackening.
    In a pan, heat a little sugar (2 tablespoons) and cook the apples over low heat until they become soft, but not completely mushy.
  2. Preparing the dough:
    In a large bowl, beat the eggs with the sugar until the mixture is light and frothy.
    Gradually add the seed oil and milk, mixing well.
    Sieve the flour and baking powder and add them to the mixture, mixing until the mixture is smooth and lump-free.
  3. Assembling the cake:
    Grease and flour a cake tin (about 24 cm in diameter).
    Pour the dough into the tin and arrange the apple slices evenly on top. You can arrange them in a radial pattern or overlap them as you like, creating a nice decorative pattern.
  4. Baking:
    Preheat the oven to 180°C (static).
    Bake the cake for about 40 minutes or until a toothpick inserted comes out clean. If the surface browns too quickly, cover with aluminum foil during the last 10 minutes of baking.
  5. Finishing and serving:
    Let the cake cool in the pan for a few minutes, then transfer it to a wire rack to cool completely.
    Sprinkle the surface with icing sugar for a sweet and decorative finishing touch.
    This cake is light, perfect as a dessert after lunch or dinner, or as a snack accompanied by a cup of tea. The softness and scent of apples will surely conquer everyone!
