INGREDIENTS
Walnuts
Water
1 teaspoon cinnamon
For the dough:
80 g (3/5 cup) icing sugar
420 g flour
200 g butter, at room temperature
8 g baking powder
1 tbsp yogurt
1 tbsp lemon flavoring or lemon zest
apricot jam
METHOD
Cook the walnuts in water for about 10 minutes. Set aside.
In a bowl, mix the butter with the icing sugar using a mixer. Add the yogurt, lemon zest, flour and yeast. Knead with your hands until the dough becomes compact.
Mix the cooked and crumbled walnuts with the ground cinnamon.
Divide the dough into 3 parts. Roll out each part with a rolling pin and form a circle with the lid. Cut each circle into 8 triangles.
Spread the apricot jam on the triangles and pour the walnut filling on the bottom. Roll each section to create biscuits.
Bake at 180° for 30 minutes.
Dust the biscuits with icing sugar before serving.
