Ingredients
1 kg of pork loin
500 ml of milk
1 onion (chopped)
2 cloves of garlic (whole, optional)
2-3 sprigs of rosemary
Extra virgin olive oil to taste
Salt and pepper to taste
1 glass of white wine (optional)
Procedure
Prepare the meat:
Dry the pork loin with absorbent paper and season it with salt and pepper on all sides.

In a large pot, heat a drizzle of extra virgin olive oil. Add the pork loin and brown it on all sides until it gets a nice golden crust.
Add the vegetables:
Add the chopped onion and garlic cloves (if using) to the pot. Fry for a few minutes until the onion becomes transparent.
Deglaze with wine (optional):
If desired, deglaze with a glass of white wine and let evaporate for a couple of minutes.
Cook in milk:
Add the milk to the pot along with the rosemary sprigs. Bring to the boil, then reduce the heat to low and cover with a lid. Cook for about 1 hour and a half, turning the meat occasionally, until tender.
Check the cooking:
After the cooking time, check that the meat is tender and cooked. If necessary, cook for a few more minutes.
Serve:
Remove the loin from the pot and let it rest for 10 minutes before slicing it. In the meantime, you can blend the milk sauce to make it creamy, if desired.
Serve the roast sliced, accompanied by the milk sauce and perhaps a side of mashed potatoes or vegetables.
Tip
You can add spices like black pepper or nutmeg for extra flavor!
