How to make the most delicious and light zucchini cake: it’s everyone’s favorite dinner for me. It takes 5 minutes to prepare and it’s very tasty

Simple and tasty courgette tart


Ingredients:


3 medium courgettes
2 eggs
50 g grated parmesan (optional, for a more flavourful touch)
2 tablespoons breadcrumbs (or oat flour for a gluten-free version)
A tablespoon of olive oil
Salt and pepper to taste
Fresh aromatic herbs (such as parsley, basil or thyme) to add a little freshness and fragrance

Method :


Grate the courgettes and squeeze them well to remove excess water.
In a bowl, beat the eggs and add the parmesan, breadcrumbs, salt, pepper and chopped herbs.
Add the grated courgettes to the mixture and mix well.
Heat a little oil in a non-stick pan, pour in the mixture and cook over medium heat for 3-4 minutes per side, until the cake is golden and well cooked inside.
Serve hot, perhaps with a light yogurt sauce or a fresh salad!
