Ingredients:
1 kg fresh mussels
200 ml thick crème fraîche
100 g Comté cheese, grated
1 shallot, finely chopped

Instructions:
Prepare the mussels:
Rinse the mussels thoroughly under cold water to remove sand and impurities. Discard any that are open or damaged.
Cook the mussels:
In a large saucepan, heat the olive oil and butter over medium heat. Add the shallots and garlic and sauté until soft.
Add the mussels, cover and cook for about 5-7 minutes, or until the mussels have opened. Discard any that remain closed.
Make the custard:
Once the mussels are cooked, remove them from the pan and leave to cool slightly. Shell the mussels and place them in a bowl.

Preheat the oven to 200°C (400°F). Divide the mussel and cream mixture between individual ramekins or ramekins. Sprinkle with grated Comté cheese and breadcrumbs.
