JUICY EGGPLANT PIZZA STEAKS

Juicy Eggplant Pizza Steaks are a delicious fusion of flavors that combine the rich flavor of eggplant with the savory essence of pizza and the hearty satisfaction of steak.

Ingredients:

2 medium eggplants
1 tablespoon Italian or Tuscan seasoning
2 tablespoons olive oil
1/2 cup tomato sauce of choice
10 cherry tomatoes, halved
1/2 cup vegan cheese
fresh parsley, for garnish

Preheat oven to 350°F and line a baking sheet with parchment paper. Cut each eggplant in half lengthwise and slice the flesh into a diamond shape about an inch deep.

Arrange the eggplant halves on the prepared baking sheet, drizzle with oil and sprinkle with seasonings. Bake for 20 minutes. Remove from oven, do not turn off heat.

Score each eggplant fillet with a fork. Top with tomato sauce, cherry tomatoes and cheese. Return to the oven for another 10 minutes or until the cheese is melted and the top is golden brown. Serve hot, garnished with fresh parsley. Enjoy now!
