Bread Meatballs: Apulian Recipe

INGREDIENTS

  • Ingredients for 15-20 bread balls;
  • 500g of bread (I’m from Altamura but you can use your usual bread);
  • 2 medium-sized eggs;
  • Chopped parsley to taste;
  • Milk to taste;
  • Pepper to taste:
  • 50 g of pecorino and 50 g of grated parmesan;
  • A pinch of salt, 1 clove of garlic;
  • Peanut oil for frying to taste

STEP

  1. To start, take the bread, remove the crust and then crumble it coarsely;
  2. We place the bread in a bowl and pour in the milk, the bread will be quite soft, we squeeze it to eliminate the excess milk;
  3. After that, in the bowl where we put the breadcrumbs, we add the eggs, chopped parsley, grated cheeses, salt and chopped garlic;
  4.  We knead with our hands until we obtain a compact dough,
  5. With a spoon or with our hands we form our bread balls;
  6. We transfer our meatballs onto a tray, let them rest in the fridge for 25/30 minutes;
  7. Now we can fry in plenty of hot oil, remember to do it a few at a time so as not to lower the temperature of the oil;
  8. When the meatballs are golden on all sides, remove them with a slotted spoon;
  9. We gradually place our meatballs on absorbent paper to eliminate the excess oil;
  10. We place our bread meatballs on a nice tray and serve them hot;
  11. THEY ARE FABULOUS!!!
