INGREDIENTS
- Extra virgin olive oil;
- 1 onion bulb;
- Fresh basil;
- 1.5 litres of tomato pulp;
- water, salt to taste;
- 2 bay leaves;
- 10 thin horse steaks;
- Parsley;
- Salt;
- Grated pecorino cheese to taste;
- Minced garlic;
- Chili pepper (or pepper)
STEP
- Preparing the horse chops:
- Spread the horse meat slices out well on a work surface;
- Season them with salt, chilli pepper, parsley, chopped garlic and grated cheese;
- Roll each slice to form the chops and close with toothpicks;
- Fry the chopped onion in the oil in a pan with high edges, when it is golden, add the chops and brown for a few minutes;
- Then add the tomato puree, the two bay leaves, a few ladles of warm water and season with salt;
- Cover with the lid and cook for about an hour over medium heat, stirring occasionally;
- A few minutes before the end, add the fresh basil leaves;
- Serve hot!! A preparation that is nothing short of sublime… enjoy your meal!
