INGREDIENTS
- 350 g of grated carrots,
- 200 g of coconut flour;
- 200 g of almonds;
- 2 tablespoons of starch (or cornstarch);
- Half a sachet of yeast;
- 4 medium eggs;
- 120 g of granulated sugar;
- The grated peel of a lemon;
- Chocolate chips to taste
STEP
- First, we peel the carrots, cut them into small pieces and blend them in a kitchen mixer together with the sugar;
- We need to obtain a creamy mixture;
- Transfer the carrot and sugar mixture into a bowl, add the eggs and mix with an electric whisk;
- After that we add the almond flour, the coconut flour, the starch and mix until we obtain a uniform mixture;
- Finally, add the grated lemon zest, the sifted yeast and mix to combine all the ingredients well;
- Now we distribute the mixture inside the paper muffin cups without filling them to the brim;
- Add the chocolate chips;
- We place the paper cups inside the muffin tray;
- Bake the muffins with carrots, coconut, almonds and chocolate chips in the oven (preheated to static at 190 degrees) for 25/30 minutes;
- We take our Muffins out of the oven, let them cool and serve them sprinkled with icing sugar…. FABULOUS!!
