Coconut, Carrot, Almond and Chocolate Chip Muffins

INGREDIENTS

  • 350 g of grated carrots,
  • 200 g of coconut flour;
  • 200 g of almonds;
  • 2 tablespoons of starch (or cornstarch);
  • Half a sachet of yeast;
  • 4 medium eggs;
  • 120 g of granulated sugar;
  • The grated peel of a lemon;
  • Chocolate chips to taste

STEP

  1. First, we peel the carrots, cut them into small pieces and blend them in a kitchen mixer together with the sugar;
  2. We need to obtain a creamy mixture;
  3. Transfer the carrot and sugar mixture into a bowl, add the eggs and mix with an electric whisk;
  4. After that we add the almond flour, the coconut flour, the starch and mix until we obtain a uniform mixture;
  5. Finally, add the grated lemon zest, the sifted yeast and mix to combine all the ingredients well;
  6. Now we distribute the mixture inside the paper muffin cups without filling them to the brim;
  7. Add the chocolate chips;
  8. We place the paper cups inside the muffin tray;
  9. Bake the muffins with carrots, coconut, almonds and chocolate chips in the oven (preheated to static at 190 degrees) for 25/30 minutes;
  10. We take our Muffins out of the oven, let them cool and serve them sprinkled with icing sugar…. FABULOUS!!
