Soft Donut with Egg Whites and Chocolate Chips

INGREDIENTS

  • 200 g of 00 flour;
  • 50 g potato starch;
  • 200 g egg whites;
  • 140 g of granulated sugar;
  • 120 ml of sunflower seed oil;
  • 60 ml of water;
  • 60 ml of orange or lemon juice;
  • Grated zest of half a lemon;
  • 1 sachet of baking powder;
  • 100g chocolate chips or chocolate pieces
  • 1 pinch of salt.

STEP

  1. Beat the egg whites with the sugar until stiff. To obtain a good result, the egg whites must be at room temperature;
  2. In a bowl, sift the flour together with the starch and baking powder;
  3. After that add the liquids (oil, water, orange or lemon juice (filtered);
  4. Add the grated lemon zest and mix everything well;
  5. The mixture must be compact;
  6. After that we add two tablespoons of whipped egg whites and mix vigorously;
  7. Add the remaining egg whites, whipped until stiff, and mix gently from top to bottom;
  8. Now let’s complete with the chocolate chips or pieces and mix delicately;
  9. Pour the mixture into a greased and floured pan (22 cm in diameter) (alternatively, you can line the pan with baking paper;
  10. Cook our donut in the oven (preheated fan oven) at 180 degrees for 30/35 minutes;
  11. Remove from the oven and let cool, then transfer the cake to a nice serving dish;
  12. Sprinkle with plenty of icing sugar and…. ENJOY!!
