Caprese Cake

INGREDIENTS

  • 200 g of dark chocolate;
  • 200 g of almonds;
  • 200 g of sugar;
  • 150 g of butter;
  • 4 eggs.

STEP

  1. Toast the almonds in the oven at 200 degrees for about 15 minutes, then chop them in the mixer;
  2. Separate the yolks from the egg whites and beat the latter until stiff with 50 grams of sugar and a pinch of salt;
  3. Melt the chocolate in a bain-marie;
  4. Beat the softened butter with the remaining sugar until the mixture becomes frothy;
  5. Mix one egg yolk at a time into the butter cream, allowing it to absorb well before adding the next;
  6. Add the melted and warmed chocolate, the chopped almonds and mix well;
  7. Finally, add the whipped egg whites, mixing them delicately from the bottom up;
  8. Butter a 20cm diameter pan and pour the mixture into it;
  9. Bake in the oven at 180 degrees for 45 minutes
