INGREDIENTS
- 200 g of dark chocolate;
- 200 g of almonds;
- 200 g of sugar;
- 150 g of butter;
- 4 eggs.
STEP
- Toast the almonds in the oven at 200 degrees for about 15 minutes, then chop them in the mixer;
- Separate the yolks from the egg whites and beat the latter until stiff with 50 grams of sugar and a pinch of salt;
- Melt the chocolate in a bain-marie;
- Beat the softened butter with the remaining sugar until the mixture becomes frothy;
- Mix one egg yolk at a time into the butter cream, allowing it to absorb well before adding the next;
- Add the melted and warmed chocolate, the chopped almonds and mix well;
- Finally, add the whipped egg whites, mixing them delicately from the bottom up;
- Butter a 20cm diameter pan and pour the mixture into it;
- Bake in the oven at 180 degrees for 45 minutes
