Stuffed zucchini roll

INGREDIENTS

  • 4 medium courgettes;
  • 6 eggs;
  • 80 g of grated cheese;
  • Salt;
  • Pepper;
  • 150 g of sliced ​​scamorza;
  • 100 g of cooked ham

STEP

  1. Wash and clean the courgettes, cut them with the large-holed part of the grater;
  2. In a bowl, beat the eggs with the cheese, salt and pepper, then add the courgettes and mix;
  3. Transfer the mixture onto a baking tray lined with baking paper and spread over the entire surface;
  4. Bake at 180 degrees for about 15 minutes, but cooking time depends a lot on your oven;
  5. When the roll is ready, take it out of the oven, then roll it up with all the baking paper and leave it to cool like this;
  6. Once cold, delicately open the roll and fill with scamorza and cooked ham;
  7. Roll up with the help of baking paper and put in the fridge for 2 hours;
  8. Remove the courgette roll from the fridge and unroll it gently;
  9. Slice, transfer to a nice serving platter and serve… FABULOUS!!
