INGREDIENTS
- 4 medium courgettes;
- 6 eggs;
- 80 g of grated cheese;
- Salt;
- Pepper;
- 150 g of sliced scamorza;
- 100 g of cooked ham
STEP
- Wash and clean the courgettes, cut them with the large-holed part of the grater;
- In a bowl, beat the eggs with the cheese, salt and pepper, then add the courgettes and mix;
- Transfer the mixture onto a baking tray lined with baking paper and spread over the entire surface;
- Bake at 180 degrees for about 15 minutes, but cooking time depends a lot on your oven;
- When the roll is ready, take it out of the oven, then roll it up with all the baking paper and leave it to cool like this;
- Once cold, delicately open the roll and fill with scamorza and cooked ham;
- Roll up with the help of baking paper and put in the fridge for 2 hours;
- Remove the courgette roll from the fridge and unroll it gently;
- Slice, transfer to a nice serving platter and serve… FABULOUS!!
