INGREDIENTS
For the filling:
- 2 kg of fresh spring onions “Sponzali;
- 700 g of cod;
- 100 g of pitted black olives;
- 3 salted anchovies;
- 80 g of tuna;
- Extra virgin olive oil and pepper to taste (I use my NINA BELLINO)
For the bread dough:
- 250 g of 00 flour;
- 250 g of semolina flour (I use Senatori Cappelli flour)
- 250 ml of warm water;
- 15 g of brewer’s yeast;
- 2 tablespoons of extra virgin olive oil;
- 5 g of sugar and 10 g of salt
STEP
- Take a bowl, pour the yeast together with the sugar, add half of the warm water and mix well to dissolve, leave to rest for about 5-8 minutes;
- Take a bowl, pour in the flours, add the oil, the dissolved yeast, add the remaining warm water (in which we dissolved the salt) mix everything well;
- Transfer the dough onto a floured wooden board and work it vigorously for about ten minutes until it becomes soft and elastic but no longer sticky, helping yourself with a little flour for support;
- Pour a drizzle of oil into a clean bowl, transfer the dough and cover it with a slightly damp cotton cloth;
- Leave to rise for a couple of hours or until the dough has doubled in volume in the oven turned off (with only the light on);
- Take the dough and turn it quickly, put it back in the bowl, cover and let it rise again for another hour, still in the oven turned off;
- Clean and wash the onions, cut them into slices and cook them in a pan with a little extra virgin olive oil;
- Take another pan, pour a drizzle of oil, place the cod cut into small pieces, add 1 glass of water and cook. The cod should fall apart as it cooks;
- After that add the onions to the cod pan, mix, add the tuna and the anchovies washed and cut into small pieces, mix well to flavor everything, turn off and set aside;
- Roll out the dough with a rolling pin, take the pan, pour in the oil and place the dough on it, roll it out again with your hands, pour in the mixture and add the chopped olives
- Close with the other disc of dough, make a string, brush with a little more extra virgin olive oil and cook in a preheated oven at 200 degrees for 30 minutes;
- Bake and serve warm….truly amazing!!!!
