Grilled aubergines pizzaiola style

INGREDIENTS

  • 2 aubergines;
  • 300 g of cherry tomatoes;
  • Salt;
  • Pepper;
  • Oregano;
  • Parsley;
  • Basil;
  • Extra virgin olive oil

STEP

  1. Wash and dry the aubergine, slice it not too thinly;
  2. Place the aubergine slices on a baking tray and grill them;
  3. As they grill, transfer them to a baking tray lined with baking paper greased with a little oil;
  4. Place a spoonful of chopped cherry tomatoes on the grilled aubergine slices, add a little salt, sprinkle with a little oregano, a sprinkling of pepper and parsley (or basil);
  5. Add a drizzle of extra virgin olive oil and bake in a hot oven at 180 degrees for about 10 minutes;
  6. Remove from the oven, sprinkle with a few basil or parsley leaves and serve immediately… they are FABULOUS!!!
