Orecchiette alla Crudaiola: quick and easy recipe

INGREDIENTS

  • 350 g of fresh orecchiette;
  • 10 cherry tomatoes;
  • 1 clove of garlic;
  • 150 g of cacioricotta (I used ricotta marzotica);
  • 150 g of mozzarella;
  • To taste basil;
  • Salt and pepper to taste;
  • Qb of extra virgin olive oil

STEP

  1. First of all, let’s put a pot of water on the stove that will be used to cook our orecchiette;
  2. When it boils, add the orecchiette, season with salt and cook (be careful not to OVERCOOK them);
  3. We wash the cherry tomatoes thoroughly, then cut them into small pieces and pour them into a bowl;
  4. Then add the chopped basil (be sure to chop it with your hands), the garlic cut in half, the mozzarella cut into small cubes, salt, pepper, plenty of extra virgin olive oil and mix everything well;
  5. Now add the cacioricotta (I used ricotta marzotica) that we have coarsely grated to the dressing and mix again and let it rest for a moment;
  6.  We drain our orecchiette, we cool them quickly under running cold water (remember to keep them slightly warm);
  7. Now let’s pour our orecchiette into the dressing, mix everything so that all the flavours combine;
  8. We serve our orecchiette with more fresh basil, grated cacioricotta, a sprinkling of pepper and…. ENJOY YOUR MEAL!
