2 tablespoons of wine or apple cider vinegar (white or red, optional);

Clean the pumpkin thoroughly, removing the seeds and filaments. Then cut it into slices that are not too thin, wash them and dry them with a clean cloth;
Take the grill pan, heat it for at least 5 minutes, then place the pumpkin slices on it and grill on both sides for about 3/4 minutes;
Prepare the dressing emulsion in a bowl: mix together the oil, salt, garlic, vinegar, chopped parsley and chili pepper;
Once ready, place the grilled pumpkin slices in a baking dish and season with the emulsion we have prepared;
Let it flavor for at least 1 hour before serving. Our grilled pumpkin is ready to be served at the table.
