Mash the potatoes with a potato masher and place them in a large bowl;
Mix the parsley, grated cheese, whole egg, butter, milk, chopped scamorza cheese into the potatoes, salt, pepper and mix everything well;
Place the pastry on the baking tray and sprinkle it with breadcrumbs;
Pour in half of the potato mixture you have prepared;
Place the chopped ham on top and cover with the other half of the seasoned mashed potatoes;
Level well with a spatula moistened with water so as to cover well;
Sprinkle more breadcrumbs and a few flakes of butter over the surface;
Bake at maximum temperature until golden brown (it shouldn’t brown too much);
Let it cool for a few minutes before transferring it to a serving dish and serve it while still hot, but it is also excellent warm or at room temperature!
