Pour all the ingredients except the chocolate chips into a bowl and mix until well combined; the egg white must be absorbed;
Add the chocolate chips and mix;
With slightly damp hands, form balls the size of a walnut;
Place the balls we have formed on paper cups;
Transfer the paper cups containing the coconut balls onto a baking tray lined with baking paper;
Bake in the oven (already hot at 180 degrees) for about 10 minutes. They should be lightly browned, do not overcook, even if they seem too soft otherwise they will dry out;
Allow to cool before lifting the egg white and coconut cookies from the pan and then serving… they are fabulous!!!
