To begin, place the raisins in cold water for a few minutes;
Wash, clean and cut the apples into small pieces, place them in a bowl;
After that take half a lemon, squeeze it and pour it over the apples;
Add the sugar, pine nuts, raisins (well squeezed) and cinnamon to the apples and mix everything well;
Set aside;
Take a pan, pour in the butter and melt it;
Then pour in the breadcrumbs and toast them, stirring often to prevent them from burning;
Turn off and set aside;
Take the puff pastry roll, unroll it and then spread a thin layer of jam with a brush;
Spread the toasted breadcrumbs in the centre of the puff pastry then pour in the filling, taking care to leave a couple of cm from the edges;
Close the puff pastry by rolling it up on itself to form our Strudel;
Seal the edges well, prick the surface again with a fork, then brush with the egg yolk, sprinkle generously with granulated sugar and bake at 180 degrees (preheated oven) for 30 minutes;
Once ready, take the apple strudel out of the oven and sprinkle with plenty of icing sugar;
Allow to cool completely;
Now we can slice and enjoy our puff pastry strudel… too GOOD!
