500 g stale homemade bread (I used Altamura bread since I live here);
6 cherry tomatoes;
2 cucumbers or caroselli barattieri (a little-known but high-quality Apulian vegetable);
Extra virgin olive oil to taste;
Salt;
Water to taste;
1 clove of garlic;
2 red onions from Acquaviva or Tropea;
Oregano to taste
STEP
In a bowl place the washed and chopped cherry tomatoes, the peeled and sliced cucumbers or carrots, oregano, chopped garlic and thinly sliced red onion;
Add a pinch of salt, plenty of extra virgin olive oil and mix;
Add a little fresh water, another pinch of salt and the stale bread cut into cubes and mix everything well;
Store in the refrigerator until ready to serve.. it’s delicious!!
