Cold Apulian “Cialledda”

INGREDIENTS

  • 500 g stale homemade bread (I used Altamura bread since I live here);
  • 6 cherry tomatoes;
  • 2 cucumbers or caroselli barattieri (a little-known but high-quality Apulian vegetable);
  • Extra virgin olive oil to taste;
  • Salt;
  • Water to taste;
  • 1 clove of garlic;
  • 2 red onions from Acquaviva or Tropea;
  • Oregano to taste

STEP

  1. In a bowl place the washed and chopped cherry tomatoes, the peeled and sliced ​​cucumbers or carrots, oregano, chopped garlic and thinly sliced ​​red onion;
  2. Add a pinch of salt, plenty of extra virgin olive oil and mix;
  3. Add a little fresh water, another pinch of salt and the stale bread cut into cubes and mix everything well;
  4. Store in the refrigerator until ready to serve.. it’s delicious!!
