We wash the potatoes, removing all the soil, then we immerse them in a pan with cold salted water and bring to the boil;
Let it cook for about 25/30 minutes, checking the cooking with the tips of a fork;
Once cooked, drain the potatoes, peel them and cut them into thick slices and place them in a large enough bowl;
We take the red onions, peel them, then cut them into thin slices, pour them into a bowl with the addition of a pinch of salt and let them rest for about 5 minutes (an important procedure to ensure that they lose some of their intense flavour and will be more digestible;
Now we take the cherry tomatoes, wash them well under running water, pat them dry with a cloth or absorbent paper, then cut them in half (if you want, also into wedges, the choice is yours);
Pour the chopped cherry tomatoes into the bowl of potatoes;
We add the onions (which we cut and let rest previously);
Now let’s season everything well;
Pour the oil, salt, pepper, parsley (or basil) and oregano into the potatoes, onions and cherry tomatoes;
Mix everything well to combine;
We keep our tasty salad in the refrigerator until ready to serve it… SO GOOD!
