INGREDIENTS
- 4 artichokes;
- 3 eggs;
- grated cheese to taste;
- Flour to taste;
- Parsley;
- Salt;
- Pepper;
- Peanut oil for frying
STEP
- Clean the artichokes by cutting off the toughest leaves, also cut off the tip and clean the stem;
- Cut the artichokes into thin wedges and leave them to rest in salted water slightly acidulated with lemon;
- Meanwhile, in a bowl, prepare the eggs with the salt, pepper, grated cheese and chopped parsley;
- Beat all the ingredients together until everything is well combined;
- Drain the artichoke slices well, dry with a cloth to remove the acidic water, then coat the artichokes in the flour;
- After that, pass the floured artichoke slices in the egg and cheese mixture, turning them well on both sides to make the egg stick;
- Fry the artichokes (a few at a time) in boiling oil, browning them well on both sides;
- Place the fried artichokes on a plate (lined with absorbent paper);
- Transfer to a nice plate and serve hot… a real delicacy!!
