Fried artichokes Pugliese style

INGREDIENTS

  • 4 artichokes;
  • 3 eggs;
  • grated cheese to taste;
  • Flour to taste;
  • Parsley;
  • Salt;
  • Pepper;
  • Peanut oil for frying

STEP

  1. Clean the artichokes by cutting off the toughest leaves, also cut off the tip and clean the stem;
  2. Cut the artichokes into thin wedges and leave them to rest in salted water slightly acidulated with lemon;
  3. Meanwhile, in a bowl, prepare the eggs with the salt, pepper, grated cheese and chopped parsley;
  4. Beat all the ingredients together until everything is well combined;
  5. Drain the artichoke slices well, dry with a cloth to remove the acidic water, then coat the artichokes in the flour;
  6. After that, pass the floured artichoke slices in the egg and cheese mixture, turning them well on both sides to make the egg stick;
  7. Fry the artichokes (a few at a time) in boiling oil, browning them well on both sides;
  8. Place the fried artichokes on a plate (lined with absorbent paper);
  9. Transfer to a nice plate and serve hot… a real delicacy!!
