First of all, collect the basil before preparation;
Wash the basil in plenty of water, remove any traces of soil and dry by dabbing gently with absorbent paper;
Take the jars, which we previously sterilized, a very important step:
Now pour a spoonful of coarse salt on the bottom of the jar;
After that we add the basil leaves, pressing them well, then more coarse salt:
Fill the jar with extra virgin olive oil until all the contents are submerged and making sure to let any air bubbles escape;
We put our jar in a dark pantry until we need to use it;

NOTE
Basil scented oil can be kept for a long time;
I remind you that the basil leaves must always remain covered by the oil, so as the oil level drops, add more until it covers the leaves remaining in the jar.
