Serafina Octopus Salad

INGREDIENTS

  • 1 kg of fresh octopus;
  • A little vinegar;
  • A bay leaf;
  • 2-3 cherry tomatoes;
  • A stick of celery;
  • Oil;
  • Salt;
  • Pepper;
  • Parsley

STEP

  1. Wash the octopus well, then take a pan;
  2. Add a little salt, the cherry tomatoes, bay leaves and a drizzle of vinegar and bring to the boil;
  3. Then take the octopus and immerse it three times in a row in boiling water (to make the tentacles curl);
  4. Put the octopus back into the water and cook for about 1 hour, turn off the heat and let it cool in the cooking water;
  5. Now, once it has cooled down, remove the eyes and the beak, then cut it into small pieces, place it in a bowl and season it with chopped parsley, chopped garlic (from which we have removed the sprout), pepper, lemon and extra virgin olive oil. If you like, you can also add some boiled potatoes cut into small pieces;
  6. Mix well and serve.. if you want we can accompany it with a nice green salad! Fabulous!!
