INGREDIENTS
- 1 round roll of puff pastry
For the apple filling:
- 6 apples (Golden);
- 50 g butter;
- 1 teaspoon cinnamon;
- 80 g of granulated sugar;
- Juice of 1 lemon
For the lemon meringue:
- 150 g of granulated sugar;
- 3 egg whites at room temperature;
- Juice of 1 lemon

STEP
- Peel and cut the apples into small pieces, take a large enough pan, add the butter and melt;
- Once the butter has melted, add the apples, sugar, lemon juice, cinnamon and mix until the ingredients are well combined, cover with the lid and cook for 10/15 minutes, the apples must be soft;
- Take a springform pan (20 cm in diameter), butter it, cover it with the puff pastry leaving the edge high;
- Pour the cooked apples into the pan covered with puff pastry and level with a spatula;
- In the planetary mixer (you can also use an electric whisk) pour the egg whites and start whipping. Slowly, always whipping, pour in the sugar and lemon juice. The mixture should be velvety;
- Pour the meringue over the apples, covering them well, cook at 180 degrees (preheated oven), for 40 minutes;
