Cook Time: 10 minutes

Ingredients

  • 2 cups leftover prime rib, shredded or thinly sliced
  • 1 tbsp olive oil or butter
  • 1 small onion, thinly sliced
  • 2 garlic cloves, minced
  • 1 tsp chili powder
  • ½ tsp cumin
  • ½ tsp smoked paprika
  • ¼ tsp ground oregano
  • Salt and pepper, to taste
  • 8 small flour or corn tortillas

Toppings:

  • Shredded cheese (cheddar, Monterey Jack, or queso fresco)
  • Chopped lettuce
  • Diced tomatoes
  • Sliced avocado or guacamole
  • Sour cream or crema
  • Salsa or hot sauce
  • Lime wedges

Instructions

  1. Prep the Meat:
    • Shred or thinly slice your leftover prime rib. Trim any excess fat if needed.
  2. Sauté the Onion and Garlic:
    • Heat the olive oil or butter in a skillet over medium heat. Add the sliced onion and cook for 3–4 minutes until softened. Add the minced garlic and cook for another 30 seconds, stirring frequently.
  3. Season and Warm the Meat:
    • Add the shredded prime rib to the skillet. Sprinkle with chili powder, cumin, smoked paprika, oregano, salt, and pepper. Toss everything together and cook for 2–3 minutes, just until the meat is warmed through.
  4. Warm the Tortillas:
    • While the meat is heating, warm the tortillas in a dry skillet, directly over a gas flame, or in the microwave.
  5. Assemble the Tacos:
    • Divide the seasoned prime rib among the tortillas. Add your favorite toppings, squeeze some fresh lime juice over the top, and serve immediately.

Do’s and Don’ts

DO:

  • Use a cast-iron skillet for even heat and extra flavor.
  • Customize your toppings to fit your preferences or whatever you have on hand.
  • Warm the tortillas—they’re more pliable and flavorful when heated.

DON’T:

  • Overcook the prime rib while reheating—it’s already cooked and just needs warming.
  • Overload your tacos. Keep it simple so the rich flavor of the prime rib shines.
  • Skip the lime juice; it brightens the flavors and balances the richness of the meat.

Optional Add-Ins and Variations:

  • Southwestern Flair: Add black beans or corn to the taco filling.
  • Street-Style: Top with pickled onions, cilantro, and crumbled queso fresco.
  • Breakfast Tacos: Scramble some eggs with the prime rib for a hearty morning meal.

These Prime Rib Tacos turn decadent leftovers into a quick and flavorful feast. Whether you’re keeping it classic with cheese and salsa or going gourmet with avocado and crema, these tacos are sure to impress. 🌮✨
