Ingredients

  • 1 lb beef sirloin or tenderloin, thinly sliced into strips
  • 2 tbsp all-purpose flour
  • Salt and black pepper, to taste
  • 2 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 medium onion, finely chopped
  • 2 cloves garlic, minced
  • 8 oz cremini or button mushrooms, sliced
  • 1 cup beef broth
  • 1 cup sour cream
  • 1 tbsp Dijon mustard
  • 1 tsp Worcestershire sauce
  • 12 oz egg noodles (or pasta of your choice)
  • Fresh parsley, chopped, for garnish

Instructions

  1. Prepare the Beef:
    • Season the beef strips with salt and pepper, then toss with flour to coat evenly.
  2. Sear the Beef:
    • Heat the olive oil in a large skillet over medium-high heat. Sear the beef strips in batches for 1–2 minutes per side, just until browned. Remove from the skillet and set aside.
  3. Sauté the Vegetables:
    • In the same skillet, melt the butter. Add the onion and cook for 3–4 minutes until softened. Add the garlic and mushrooms, and sauté for another 5–7 minutes until the mushrooms release their juices and start to brown.
  4. Make the Sauce:
    • Pour in the beef broth, scraping up any browned bits from the bottom of the skillet. Stir in the Dijon mustard and Worcestershire sauce. Simmer for 5 minutes to reduce slightly.
  5. Add the Creaminess:
    • Lower the heat and stir in the sour cream. Mix until smooth and creamy. Do not let it boil to prevent curdling.
  6. Combine Beef and Sauce:
    • Return the beef to the skillet, stirring to coat it in the sauce. Simmer gently for 5 minutes, just until the beef is tender and heated through. Adjust seasoning with salt and pepper if needed.
  7. Cook the Pasta:
    • While the sauce is simmering, cook the egg noodles according to the package instructions. Drain and toss with a little butter or oil to prevent sticking.
  8. Serve:
    • Serve the beef stroganoff over the noodles, garnished with fresh parsley.
