Ingredients:
800 g pork belly, cut into pieces
1/2 teaspoon salt
1/2 teaspoon garlic powder
juice of one lemon
2 tablespoons oil
1 small onion, chopped
1 tablespoon chopped garlic
1 small red bell pepper, chopped
1 tablespoon paprika
1/2 teaspoon turmeric powder
1 carrot, chopped
1/2 cup peas
500 g washed rice
Salt to taste
Pepper to taste
3 cups water
Coriander to taste (optional)
Instructions:
In a bowl, mix pork belly with salt, garlic powder and lemon juice. Marinate for 10 minutes.
In a large frying pan, heat the oil and add the bacon pieces. Cook until golden and crispy. Reserve.
In the same fat, add the chopped onion and garlic. Sauté for 2 minutes.
Add the bell pepper and sauté for a further 1 minute.
Add the paprika and turmeric. Mix well and cook for a further minute.
Add the carrot, peas and washed rice. Season to taste with salt and pepper.
Pour in the 3 cups of water, stir and cook over medium heat until the water is absorbed.
Add the golden chicharrón and, if desired, a little chopped coriander.
Cook over low heat until the rice is completely cooked.
