CREPE BATTER

Ingredients:

2 eggs
150g flour
250 ml milk
1 tablespoon sugar
1 tablespoon extra virgin olive oil
1 pinch salt
Extra virgin olive oil to grease the pan

Preparation:

  1. Put all the ingredients in a jar and beat very well with the mixer, you should have a mixture without lumps.
  2. This mixture can be used immediately, but it is always advisable to let it rest for an hour in the refrigerator.
  3. Once rested, mix the jar a little with a spoon, it should have the texture of a liquid cream, if for some reason it is too thick you can add a little milk.
  4. Grease a non-stick pan very lightly with a pinch of extra virgin olive oil.
  5. When it is very hot, add a little dough and rotate the mold to help the dough spread. When you see that the edges are starting to brown, turn it over.
