RECIPE FOR PUFFED DOUGHNUTS

(Back to school soon, snack idea for our little ones )


Ingredients:


At least for 50 donuts:

  • 500g of wheat flour
  • 150g of sugar
  • 5 medium eggs (or 4 large)
  • 100g of butter
  • 150 ml of liquid milk. Powdered milk can be diluted in a little warm water (1 small cup
  • 2 pinches of salt
  • Lemon zest
  • 2 sachets of vanilla sugar (or vanilla flavoring)
  • 0.75 sachet of baking powder (do not put the whole sachet… leave a little because too much yeast disturbs the final shape)
  • Frying oil
    Preparation:
    1- mix the sugar + butter + vanilla sugar properly (as for making cakes)
    2- Add the whole eggs and mix well, then the lemon zest
    3- Then add half of the flour, mix well
    4- Pour in the milk + the rest of the flour + the salt, mix well
    5- Pour the baking powder at the end of the preparation and mix well.
    Can be fried directly. But they will be better with a rest of 2 to 4 hours or even overnight if you want to eat them in the morning.
    Heat properly oil
    Then fry over very medium heat to prevent it from browning without cooking. Use a large spoon (or an ice cream scoop) if you can’t cut the dough with your hands.
    After frying your donuts, it’s OK. Put on absorbent paper to remove excess oil or in a drainer.
    To prevent the oil from foaming, add the juice of a lemon and/or a little baking soda after the first few turns.
