Ingredients:
500 g flour
200 g butter
60 g sugar
25 cl milk
two teaspoons of baker’s yeast
one teaspoon salt
Instructions:
- Dissolve the yeast in the warm milk. Mix the flour, sugar and teaspoon of salt. Add the milk and mix well.
- Roll out the dough with a rolling pin on a floured work surface. Cut thin strips from the cold butter and place them over the entire surface of the dough. Fold the dough over itself in three folds.
- Place the dough in the fridge for 15 minutes. Then, take it out, roll it out again and fold it into three. Put it back in the fridge for 15 minutes.
- Roll out the dough very thinly on your work surface. Cut out triangles of the desired size and roll them up, ending with the point.
- Arrange your croissants on a baking sheet covered with baking paper and let them rise for 1 hour at room temperature.
- Bake for 20 minutes at 180°C.
