Pumpkin balls

Ingredients

  • 500g cooked and mashed pumpkin
  • 100g of breadcrumbs
  • 50g grated cheese
  • 2 eggs
  • Salt and pepper to taste
  • Oil for frying

Instructions

  • Steam or bake the pumpkin until it is tender. Once cooked, mash it with a fork until it becomes a smooth puree.
  • In a large bowl, combine the pumpkin, breadcrumbs , grated cheese and eggs. Season with salt and pepper.
  • Mix everything together until you get a smooth mixture. If the mixture is too soft, add more breadcrumbs.
  • Form meatballs with your hands, trying to obtain a uniform shape.
  • Heat the oil in a pan and fry the meatballs until golden brown and crispy on the outside.

Notes

Cooking variations: If you prefer a lighter version, you can cook the meatballs in the oven at 180°C for about 20-25 minutes, turning them halfway through cooking to brown them evenly.
