Ingredients
- 500g cooked and mashed pumpkin
- 100g of breadcrumbs
- 50g grated cheese
- 2 eggs
- Salt and pepper to taste
- Oil for frying
Instructions
- Steam or bake the pumpkin until it is tender. Once cooked, mash it with a fork until it becomes a smooth puree.
- In a large bowl, combine the pumpkin, breadcrumbs , grated cheese and eggs. Season with salt and pepper.
- Mix everything together until you get a smooth mixture. If the mixture is too soft, add more breadcrumbs.
- Form meatballs with your hands, trying to obtain a uniform shape.
- Heat the oil in a pan and fry the meatballs until golden brown and crispy on the outside.
Notes
Cooking variations: If you prefer a lighter version, you can cook the meatballs in the oven at 180°C for about 20-25 minutes, turning them halfway through cooking to brown them evenly.
