Ingredients

  • 3 medium potatoes
  • 2 carrots
  • 1 courgette
  • 1 small onion
  • Breadcrumbs (as needed)
  • 1 egg (optional)
  • Salt and pepper
  • Herbs of your choice (parsley, thyme)

Instructions

  • Boil the vegetables : Cook the potatoes and carrots in plenty of salted water until they are tender. In the meantime, grate the courgette and squeeze out the excess water.
  • Mix the ingredients : Once cooked, mash the potatoes and carrots, then add the courgette, chopped onion, aromatic herbs, salt and pepper. At this point, you can incorporate the egg to bind the dough better, or omit it for a vegan version.
  • Form the meatballs : Using wet hands, form the meatballs, rolling them in the breadcrumbs to obtain a crispy crust.
  • Cooking : Vegetable meatballs can be fried in olive oil or baked at 200°C for about 20-25 minutes, turning them halfway through cooking to brown them evenly. For a lighter version
