To prepare the cream of potatoes with mushrooms , you need to start with the essential ingredients. Potatoes , rich in starch, guarantee a creamy and full-bodied consistency.

- Use about 500 g of fresh potatoes and make sure you choose quality mushrooms, such as porcini or champignon mushrooms ( 300 g ).
- Also prepare 1 liter of vegetable. You will need 1 onion and 1 clove of garlic to further flavor the cream.
- Start by browning the chopped onion and garlic in 4 tablespoons of extra virgin olive oil together with 20 g of butter . This step allows you to create an aromatic and balanced soffritto. Add the diced potatoes and the cleaned and sliced mushrooms, mixing well.
