  • 400g cooked and mashed pumpkin pulp
  • 200g of 00 flour
  • 1 egg
  • 100g grated parmesan cheese
  • Salt and nutmeg to taste

For the crispy speck cream :

  • 150g of speck cut into strips
  • 200 ml of fresh cream
  • 1 tablespoon olive oil

Instructions

Making Pumpkin Gnocchi
To start, cook the pumpkin until soft, then drain and mash with a fork. Add the egg, parmesan, and a pinch of salt and nutmeg. Then gradually incorporate the flour until you get a smooth dough, but not too hard.

Divide the dough into small pieces and form gnocchi balls. Cook them in plenty of salted water until they float, which takes about 2-3 minutes.

Making the Crispy Speck Cream
Meanwhile, in a non-stick pan, heat the oil and add the speck. Cook until crispy. Then pour in the cream and stir to create a thick and tasty cream.

Notes

Serve the pumpkin gnocchi hot, garnished with the crispy speck cream and a sprinkling of parmesan for an explosion of flavors.
