Discover the pleasure of making bread at home!
Ingredients:
For the leaven:
50 g of 0 bread flour
50 g of warm water
1 teaspoon of dry brewer’s yeast (or 6 g of fresh yeast)
1 teaspoon of honey
For the dough:
300 g of 0 bread flour
170 g of water (not cold)
1 tablespoon of lard (or butter/olive oil)
2 teaspoons of salt
0 flour for dusting to taste
Procedure:
Prepare the leaven: Mix the flour, yeast, warm water and honey until you get a semi-liquid batter. Cover with cling film and let it rise for 1 hour, until doubled in size.
Prepare the dough: In a stand mixer, combine the flour, leaven and water. Knead until you get a smooth mixture. Add the lard and salt, continuing to knead for at least 10 minutes.
First rising: Form a ball and let it rise in a bowl covered with a cloth for about 2 hours.
Making the folds: Roll out the dough on a floured surface and make wallet folds, forming a sausage to roll into a round loaf.
Second rising: Cover the dough and let it rest for 45 minutes. Preheat the oven to 230°C, placing a small pan of water on the bottom to create steam.
Cooking: Make cuts on the surface and bake in the oven for about 30 minutes. If it darkens too much, lower the temperature slightly.
Cooling: Let the bread cool before slicing and enjoying it.
