Oatmeal, Apple and Raisin Cake

Oatmeal, Apple and Raisin Cake is a nutritious dessert, perfect for breakfast or a snack. Made with gluten-free oat flakes , fresh apples and raisins , it is simple and healthy. Ideal for those who want a genuine dessert, it can be adapted with vegan or sugar-free variants, adapting to different dietary needs.


Ingredients

  • 100 g of oat flakes (gluten-free)
  • medium apples , diced
  • 100 ml of water
  • 1 medium banana , mashed
  • eggs (or vegan substitute)
  • 1 teaspoon baking powder
  • 70 g of almonds (or walnuts)
  • 50 g of raisins
  • Powdered sweetener (optional)

Instructions

  • In a bowl, combine the oats with the water and let sit for 10 minutes. This step allows the oats to absorb the water, making the dough softer.
  • Add the chopped apples, mashed banana and raisins. Mix well to distribute the ingredients.
  • Add eggs (or vegan substitute) and baking powder . If you prefer a sweeter taste, add a natural sweetener.
  • Finally, chop the almonds and add them to the mixture. Mix until you get a smooth dough.
  • Pour the mixture into a pan lined with baking paper and bake at 180°C for about 35-40 minutes. The cake will be ready when the surface is golden and compact.
