Instructions

The key to a perfect soup is to cook the potatoes evenly. Start by roasting the garlic in the oven, wrapping it in foil with a little olive oil. When the garlic is done, it will taste much sweeter and less pungent than raw garlic. At this point, you can add it to the vegetable broth along with the potatoes. Let it cook until the potatoes are soft and easy to mash.
